Carrot Citrus Raisin Mead

- 3 ½ lbs carrots, peeled and chopped
- 1 lb raisins
- 5 cups honey
- 2 tsp yeast energizer
- 6 oranges, juice and rind
- 4 tsp tannin
- 1 campden tablet
- 1 packet mead yeast

Begin by washing and peeling the carrots, then chop them into small pieces.

In a large pot, combine the chopped carrots, raisins, and enough water to cover them. Boil for about 30 minutes, then remove from heat and cool slightly.

Strain the liquid into a fermentation vessel, discarding the solids.

Add honey, orange juice, and zest to the strained liquid, stirring until the honey dissolves completely.

Incorporate tannin and yeast energizer, then crush the campden tablet and stir it in. Allow the mixture to rest for 24 hours.

After 24 hours, sprinkle the packet of mead yeast over the surface without stirring, so the yeast activates naturally.

Seal the fermentation vessel with an airlock and place it in a cool, dark area for 4-6 weeks.

Once fermentation is complete, siphon the mead into bottles, leaving sediment at the bottom, and seal tightly.

Age the mead for at least 3 months before enjoying for the best flavor development.
