- 3 lbs. wildflower honey
- 4 cups fresh raspberries
- 2 cups passion fruit puree
- 1 gallon filtered water
- 1 tsp. Lalvin ICV D-47 yeast
- 1/2 cup corn sugar (for priming)
- 1 tsp. yeast nutrient
- 1 orange (zest only)

In a large pot, heat 1 gallon of filtered water until just warm, then stir in the honey until fully dissolved.

Remove from heat and let cool to room temperature.

Add the passion fruit puree, fresh raspberries, and orange zest.

Transfer to a sanitized fermentation vessel and add yeast nutrient followed by champagne yeast.

Seal the vessel with an airlock and let ferment in a dark, cool place for approximately 2 to 4 weeks, or until bubbling stops.

Once fermentation is complete, siphon the mead into another sanitized container, leaving sediment behind.

Dissolve corn sugar in a small amount of boiling water and add to the mead for priming.

Bottle the mead using sanitized bottles and cap them securely.

Store in a cool, dark place for another 4 to 6 weeks for carbonation to develop.
