Carrot Harvest Pasta Sauce

- 4 medium-sized carrots, peeled and chopped
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese

In a large pot of boiling water, cook the chopped carrots until tender. Drain and set aside.
