Cascade ’n Honey IPA

- 9 lbs Pale Malt (2-row)
- 1 lb Honey Malt
- 1 lb Light Dried Malt Extract
- 1 lb Local Honey
- 1 oz Cascade hops (bittering, 60 min)
- 1 oz Cascade hops (flavor, 15 min)
- 1 oz Cascade hops (aroma, 5 min)
- 1 packet American Ale yeast (e.g., Safale US-05)
- 5 oz Corn sugar (for priming)
- Water to reach 5-gallon mark

Sanitize all brewing equipment, including fermenter and spoon.

In a large brew kettle, heat 3 gallons of water to 165°F.

Add the crushed Pale and Honey malts, stirring to avoid clumps, and steep for 30 minutes.

Remove the grain bag and bring the liquid to a boil.
- 5.
Stir in the Dried Malt Extract and commence boiling.
- 6.
Add 1 oz of Cascade hops for bittering and boil for 60 minutes.
- 7.
With 15 minutes remaining, add another oz of Cascade hops for flavor.
- 8.
In the last 5 minutes of the boil, add the final oz of Cascade hops for aroma.

Remove from heat, cool the wort quickly using a wort chiller or ice bath, then transfer to the fermenter.

Once cooled, add water to reach the final volume and stir in your local honey until fully dissolved.
- 11.
Pitch the yeast and seal the fermenter with an airlock.
- 12.
Allow fermentation at around 68°F for 2 weeks.

After fermentation, dissolve corn sugar in 2 cups of boiling water and add to the bottling bucket.

Transfer beer from fermenter to bottling bucket, gently mixing with the sugar solution.
- 15.
Bottle the beer and cap securely, letting it carbonate for 1-2 weeks.
