Colorful Fiesta Nachos
ingredients
- 12 oz tortilla chips
- 1 lb ground beef
- 1 packet taco seasoning
- 15 oz can black beans, drained and rinsed
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 cup diced orange bell pepper
- 1/2 cup sliced red onion
- 1/2 cup corn (fresh or canned)
- 1 medium tomato, diced
- 1/2 cup sliced black olives
- 1 avocado, mashed (for guacamole)
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- Optional: hot sauce for drizzling

Preheat your oven to 375°F (190°C).

In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in taco seasoning.

Spread tortilla chips evenly on a large baking sheet.

Layer seasoned beef, black beans, diced orange bell pepper, sliced red onions, corn, tomatoes, black olives, and both kinds of cheese over the chips.

Bake in the preheated oven for 10-15 minutes, until cheese is melted and bubbling.
- 6.
Remove from oven and top with dollops of guacamole and sour cream.
- 7.
Garnish with fresh cilantro and chopped green onions; drizzle with hot sauce if desired.
- 8.
Serve immediately and relish the burst of flavors!
