- 1 cup whole milk
- 1 vanilla bean, split
- 4 egg yolks
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1/4 cup unsalted butter
- 4 egg whites
- 1/4 cup sugar

Heat milk with vanilla bean; whisk yolks, sugar, cornstarch.
