ingredients
- 1 cup pearl barley
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1 vanilla bean, split lengthwise
- 3 large eggs
- 1/4 teaspoon salt
- Ground cinnamon, for garnish (optional)
steps
- 1.
In a large saucepan, bring the milk to a gentle simmer over medium heat.
- 2.
Add the pearl barley and vanilla bean. Stir well, cover, and simmer for 45 minutes, or until the barley is tender and fully cooked.
- 3.
Remove the vanilla bean and scrape the seeds into the milk-barley mixture. Discard the vanilla bean pod.
- 4.
In a separate bowl, whisk together the sugar, eggs, and salt until well combined.
- 5.
Slowly pour the egg mixture into the barley mixture, stirring continuously to prevent curdling.
- 6.
Cook over low heat, stirring constantly, for 10-15 minutes, until the mixture thickens to a pudding-like consistency.
- 7.
Remove from heat and let cool slightly.
- 8.
Pour the pudding into individual serving dishes or one large bowl.
- 9.
Refrigerate for at least 2 hours, or until set and chilled.
- 10.
Serve cold, sprinkled with a pinch of ground cinnamon if desired.
