Warm Salmon Spinach Fusion
ingredients
- 12 oz fresh salmon fillet, skinless
- 2 cloves garlic, minced
- 2 tbsp butter
- 4 cups fresh spinach, chopped
- 1 medium onion, diced
- 1 cup cherry tomatoes, halved
- 1 cup Greek yogurt
- ½ cup asiago cheese, grated
- ½ cup milk
- Salt and pepper to taste
- Fresh lemon juice (optional, for garnish)

Preheat the oven to 375°F. Place the salmon fillet on a baking sheet and season with salt and pepper. Bake for 15-20 minutes or until cooked through.

In a skillet, melt the butter over low heat and sauté the minced garlic until fragrant, about 1 minute.

Add the diced onion to the skillet and cook until translucent, stirring occasionally, about 3-4 minutes.

Fold in the chopped spinach until wilted, then remove from heat and let it cool slightly.

In a bowl, combine Greek yogurt, asiago cheese, and milk. Mix well to create a smooth sauce; season with salt and pepper to taste.
