- 3 quarts water
- 3 cups honey
- 1 cup pure maple syrup
- 2 tablespoons cinnamon (plus extra for serving)
- 1 packet mead yeast (e.g., Lalvin D-47)
- 1 tablespoon lemon juice
- 2 teaspoons vanilla extract
- 1 whole cinnamon stick (for aging)
- 1 cup apple juice or cider (optional, for flavor depth)

In a large pot, bring 1 quart of water to a boil. Add honey, maple syrup, and cinnamon; stir until dissolved.

Remove from heat and pour the mixture into a sanitized fermentation vessel.

Stir in lemon juice, vanilla extract, and apple juice (if using).
