Cinnamon Chickpea Cookie Bites

- 1 cup cooked chickpeas
- ½ cup low-fat cottage cheese
- ¼ cup maple syrup
- ¼ cup coconut sugar
- 2 tablespoons ground flaxseed
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons coconut sugar (for rolling)
- 1 teaspoon cinnamon (for rolling)

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a food processor, blend the chickpeas, cottage cheese, maple syrup, coconut sugar, ground flaxseed, cinnamon, vanilla extract, baking powder, and salt until smooth.

Transfer the mixture to a mixing bowl.

Scoop tablespoon-sized portions of the dough and roll into balls.

In a separate small bowl, mix together the coconut sugar and cinnamon for rolling. Roll the dough balls in the cinnamon sugar mixture until coated.

Place the coated dough balls onto the prepared baking sheet and gently press them down with a fork.

Bake for 12-15 minutes until golden brown.
