Cheesy Ham and Rice Casserole
ingredients
- 2 cups cooked ham, diced
- 1 cup long-grain white rice, rinsed
- 4 cups low-sodium chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (to taste)
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 2 tablespoons chopped fresh parsley (for garnish)

Heat the olive oil in a skillet over medium heat, sautéing the onion and garlic until translucent.

In the crockpot, combine the cooked ham, rinsed rice, sautéed onion and garlic, frozen mixed vegetables, and seasonings (thyme, paprika, pepper, and salt).

Pour the chicken broth over the mixture and stir gently to combine all ingredients.

Add the shredded cheddar and softened cream cheese, mixing thoroughly until well incorporated.

Cover and cook on low for 4-6 hours, or until the rice is tender and liquid is absorbed.

Once done, give it a gentle stir, and garnish with fresh parsley before serving.
