Hearty Chicken and Veggie Casserole

- 1 cup frozen broccoli florets
- 1/2 cup frozen corn
- 1 cup cooked chicken, shredded
- 1 medium sweet potato, peeled and diced
- 1/2 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 tablespoon olive oil
- 1/4 cup bread crumbs (optional, for topping)

Preheat your oven to 375°F (190°C).

In a pot, boil diced sweet potato until tender, about 15 minutes. Drain and mash with olive oil, salt, and pepper. Set aside.

In a large bowl, combine cooked chicken, frozen broccoli, frozen corn, milk, garlic powder, onion powder, salt, and pepper. Mix well.

In a greased 8x8-inch baking dish, layer the chicken and vegetable mixture evenly across the bottom.

Spread the mashed sweet potato over the top and smooth it out with a spatula.

Sprinkle shredded cheddar cheese on top of the sweet potatoes. If desired, add bread crumbs for extra crunch.

Bake in the preheated oven for 25-30 minutes, until bubbly and golden brown.
