Creamy Beef and Avocado Stuffed Potatoes

- 4 large russet potatoes
- 1 lb ground beef
- 1 ripe avocado, diced
- 1 cup frozen peas
- 1 cup corn
- 1 small onion, chopped
- 4 slices bacon, chopped
- 1 cup shredded cheese (cheddar or your choice)
- 3 tbsp olive oil
- ½ cup milk
- 2 tbsp mayonnaise
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp oregano
- 1 tsp mustard powder
- 1 tsp salt
- ½ tsp black pepper
- Butter for greasing
- Zest of 1 lemon

Preheat the oven to 400°F (200°C). Scrub the potatoes and prick them with a fork. Rub with olive oil and sprinkle with salt. Bake for about 45-60 minutes, or until tender.

In a skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.

In the same skillet, add chopped onion and cook until translucent. Add ground beef, breaking it apart, and cook until browned. Stir in peas, corn, garlic powder, onion powder, paprika, turmeric, oregano, mustard powder, salt, and black pepper.
