Savory chicken & veggies in a tangy yogurt-coconut sauce, a wholesome meal.
ingredients
- 2 chicken breasts (7 oz each)
- 1 tbsp olive oil
- 1 small zucchini, sliced
- 1 cup broccoli florets
- 1/2 cup sliced mushrooms
- 1/2 cup plain yogurt
- 1 tbsp honey
- Salt and pepper to taste
steps

Preheat oven to 375°F (190°C).

Season chicken with salt and pepper.
- 3.
In a skillet, heat olive oil and sear chicken for 3 minutes per side.

Remove and set aside.
- 5.
In the same skillet, sauté zucchini, broccoli, and mushrooms until slightly tender.
- 6.
Add plain yogurt and honey. Stir well.
- 7.
Place chicken back in the skillet and bake for 20 minutes.
- 8.
Serve hot and enjoy!
