ingredients
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 teaspoons vanilla extract
- 1/2 cup chocolate chips
steps
- 1.
In a medium saucepan, combine the milk, heavy cream, sugar, cocoa powder, and salt. Heat over medium heat until it starts to simmer, stirring occasionally.
- 2.
In a separate bowl, whisk together the egg yolks. Gradually pour about 1/2 cup of the hot milk mixture into the yolks, whisking constantly to avoid curdling.
- 3.
Pour the yolk mixture back into the saucepan with the remaining hot milk mixture, whisking well. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 4-5 minutes. Do not let it boil.
- 4.
Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool to room temperature.
- 5.
Once cooled, cover the saucepan with plastic wrap, ensuring it touches the surface of the custard to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
- 6.
Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions, usually 20-25 minutes.
- 7.
In the last 5 minutes of churning, add the chocolate chips to incorporate them into the ice cream.
- 8.
Transfer the ice cream to a lidded container and freeze for at least 3-4 hours until firm.
- 9.
Serve the Creamy Cocoa Bliss alone or topped with your favorite chocolate syrup or sprinkles!
