Hazelnut Ice Cream with Sour Cherries and Honey

Rich and creamy hazelnut ice cream with tart sour cherries and sweet honey swirled in, topped with rich chunks of chocolate.

- 1 cup hazelnuts, toasted
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 5 egg yolks
- 1/4 tsp salt
- 1/2 cup honey
- 1/2 cup sour cherries, pitted
- 1/2 cup chopped dark chocolate

In a blender or food processor, grind the hazelnuts until finely ground.

In a large saucepan, heat the cream, milk, sugar, salt, and ground hazelnuts over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.

In a medium bowl, whisk the egg yolks. Gradually add 1 cup of the hot cream mixture to the yolks, whisking constantly to avoid scrambling the eggs.

Pour the yolk mixture back into the saucepan with the remaining cream mixture, stirring constantly until it thickens and coats the back of a spoon.

Strain the mixture through a fine-mesh sieve into a clean bowl. Let cool for 30 minutes, then stir in the honey and sour cherries. Cover and chill in the refrigerator for at least 4 hours, or overnight.

Churn the ice cream mixture in an ice cream maker according to the manufacturer's instructions. During the last few minutes of churning, add the chopped chocolate. Transfer to a freezer-safe container and freeze for at least 2 hours before serving.
