Coconut Yogurt Garlic Chicken Pasta

- 8 oz fettuccine pasta
- 2 chicken breasts, boneless and skinless
- 4 cloves of garlic, minced
- 1 cup coconut yogurt
- ½ cup grated Parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and black pepper, to taste

Cook the fettuccine pasta according to the package instructions. Drain and set aside.

Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium heat, then cook the chicken until golden brown and cooked through. Remove from skillet and set aside.

In the same skillet, melt the butter and add minced garlic. Cook until fragrant and slightly golden.

Pour in the coconut yogurt and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly.
