ingredients
- 4 pounds Yukon Gold potatoes
- 1 cup heavy cream
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary, chopped
- 4 sprigs fresh thyme, leaves only
- 1 teaspoon salt
- ½ teaspoon black pepper
steps
- 1.
Peel the potatoes and cut them into chunks. Rinse and place them in a large pot of salted water. Bring to a boil and cook until tender, around 15-20 minutes.
- 2.
Meanwhile, in a small saucepan, heat the heavy cream, butter, garlic, rosemary, thyme, salt, and black pepper over low heat. Let it simmer for 10 minutes, infusing the flavors into the cream.
- 3.
Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or a ricer until smooth.
- 4.
Pour the infused cream mixture over the mashed potatoes and stir until well combined and creamy.
- 5.
Taste and adjust the seasoning if needed. If desired, garnish with fresh herbs before serving.
