Creamy mashed potatoes infused with truffle oil and topped with crispy bacon bits. This side dish is perfect for any occasion and will leave your taste buds wanting more.
ingredients
- 2 lbs Russet potatoes, peeled and cubed
- 1 cup heavy cream
- 6 tbsp unsalted butter, room temperature
- 2 tsp truffle oil
- Salt and pepper, to taste
- 4 slices bacon, cooked and crumbled
- Fresh chives, chopped

Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil, then reduce heat to a simmer and let cook until potatoes are fork-tender, about 15-20 minutes.

Drain the water from the potatoes and let them cool for a few minutes. Add in the butter and heavy cream and mash the potatoes until the mixture is creamy.

Season the mashed potatoes with salt and pepper, then stir in the truffle oil until well combined.
