ingredients
- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts (12 oz)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 cups fresh baby spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, for garnish
steps
- 1.
Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- 2.
Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 6-8 minutes per side, or until cooked through. Remove from the skillet and let it rest for a few minutes. Slice the chicken into thin strips.
- 3.
In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the baby spinach and cook until wilted, about 2 minutes.
- 4.
Reduce the heat to low and add the heavy cream and grated Parmesan cheese to the skillet. Stir well until the sauce is creamy and smooth. Season with salt and pepper to taste.
- 5.
Add the cooked fettuccine pasta and sliced chicken to the skillet, tossing well to coat everything with the creamy sauce.
- 6.
Serve the creamy spinach and chicken pasta hot, garnished with fresh parsley.
