Creamy Tomato Vodka Sauce for a Crowd
ingredients
- 1 cup olive oil
- 8 medium-sized onions, finely chopped
- 24 garlic cloves, minced
- 8 cans (28 ounces each) crushed tomatoes
- 4 cups vodka
- 8 cups heavy cream
- 1/4 cup dried basil
- 1/4 cup dried oregano
- 2 tablespoons red pepper flakes
- Salt and pepper to taste
- Grated Parmesan cheese, for garnish

Heat olive oil in a large skillet over medium heat. Sauté onions until translucent, then add garlic and cook for an additional minute.

Pour in crushed tomatoes and vodka, stirring well. Simmer for 10 minutes, allowing the alcohol to cook off.

Add heavy cream, basil, oregano, red pepper flakes, salt, and pepper. Stir until fully combined and simmer for another 5 minutes.

Remove from heat and let the sauce cool slightly.

Transfer the sauce to a blender in batches and blend until smooth.
