Crispy Herb-Crusted Cod

Tender cod fillets coated in a flavorful herb crust, perfectly crispy and golden brown. Served with a side of crusty bread, it's a delightful lunch option that is both easy to make and deliciously satisfying.

- 4 cod fillets (6 oz each)
- 1 cup bread crumbs
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons grated Parmesan cheese
- 2 cloves garlic, minced
- 1 lemon, zest and juice
- 3 tablespoons butter, melted
- Salt and pepper to taste
- 4 slices crusty bread

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a shallow bowl, combine the bread crumbs, parsley, dill, Parmesan cheese, garlic, lemon zest, salt, and pepper.

Dip each cod fillet into the melted butter, ensuring it is coated entirely.

Press each cod fillet into the bread crumb mixture, coating both sides evenly. Place the coated fillets on the prepared baking sheet.
