ingredients
- 2 lbs bone-in lamb shoulder, trimmed of excess fat
- 1 large onion, diced
- 1 lb mushrooms, sliced
- 1/4 cup balsamic vinegar
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 2 tbsp garlic, minced
- 1 tbsp smoked paprika
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chicken or beef broth

In a large skillet over high heat, add the olive oil and lamb. Sear on all sides until browned, about 10 minutes.
