A colorful, healthy medley of fresh vegetables, all cooked together in one pot for an easy, hassle-free meal. This dish packs a punch of vitamins and minerals while being incredibly tasty at the same time. Perfect for a quick family dinner or as a side dish for a group gathering!
ingredients
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1 tbsp. olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
steps

Heat olive oil in a large skillet over medium-high heat.

Add in the sliced red and yellow bell peppers, zucchini, yellow squash and red onion. Stir well to coat all the vegetables.
- 3.
Cook for 5-7 minutes or until the vegetables are tender, stirring occasionally.
- 4.
Add garlic to the pan and cook for another minute or until fragrant.
- 5.
Season with salt and black pepper to taste.
- 6.
Remove from heat and garnish with fresh parsley.
- 7.
Serve and enjoy!
