Iron-Rich Spaghetti Squash

This hearty spaghetti squash dish is loaded with high-iron ingredients like spinach, lentils, and sunflower seeds. It's a delicious and easy way to boost your iron intake for the day.

- 1 spaghetti squash, halved and seeded
- 1 tablespoon olive oil
- 1/2 cup green lentils
- 1 clove garlic, minced
- 1/4 teaspoon dried thyme
- 1/4 teaspoon paprika
- 2 cups fresh spinach
- 1/4 cup sunflower seeds
- Salt and pepper, to taste

Preheat your oven to 375F. Place the spaghetti squash halves cut side down on a baking sheet and bake for 30-40 minutes, or until tender.

While the squash is baking, cook lentils according to package instructions.

In a separate pan, heat olive oil over medium heat. Add garlic and cook until fragrant.
