A delicious vegan curry with carrots in a creamy coconut sauce.
ingredients
- 1 tbsp coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 sweet potato, diced
- 2 carrots, sliced
- 1 can coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish

Heat coconut oil, sauté onion until translucent.
