ingredients
- 3 lbs fireweed honey
- 1 gallon spring water
- 1 packet mead yeast (like Lalvin 71B)
- 1 teaspoon yeast nutrient
- 1 teaspoon acid blend
- 1 cinnamon stick (optional)
- 1 cup fireweed flowers (fresh or dried)
- Wine bottles for storage
steps
- 1.
Sterilize all equipment and bottles to prevent contamination.
- 2.
In a large pot, heat 1 gallon of spring water to a simmer and add the fireweed honey, stirring until fully dissolved.
- 3.
Remove from heat and let cool to room temperature.
- 4.
Once cooled, transfer the honey-water mixture to a sanitized fermentation vessel.
- 5.
Add the yeast nutrient and acid blend, stirring gently.
- 6.
Sprinkle the yeast over the mixture, allowing it to hydrate for 15 minutes before stirring gently.
- 7.
If using, add the cinnamon stick and fireweed flowers into the fermentation vessel.
- 8.
Seal the vessel with an airlock and place it in a dark, cool area (around 65-75°F).
- 9.
Allow it to ferment for about 4-6 weeks, until bubbling stops and sediment forms at the bottom.
- 10.
Carefully siphon the mead into sanitized wine bottles, leaving sediment behind.
- 11.
Let the mead age for at least 3 months before tasting for optimal flavor.
