- 4 lb. honey
- 1/4 oz. citric acid
- 1/4 pint strong freshly-made tea
- 3 pints gorse flowers
- Yeast (specific for mead or wine)
- Yeast nutrient

Begin by sterilizing all equipment, including a fermentation vessel and bottles.

In a saucepan, dissolve the honey in 1 quart of boiling water, stirring until fully integrated.

Add the strong freshly-made tea to the honey mixture along with citric acid, blending well.

Pour the honey-tea mixture into the fermentation vessel, filling it to about halfway.

Add the gorse flowers to the vessel, allowing their delightful fragrance to infuse into the mead.

Top up the vessel with additional water until it reaches about 1 gallon.

Allow the mixture to cool to room temperature before adding the yeast and yeast nutrient.

Seal the fermentation vessel with an airlock and place it in a dark, warm location (65-75°F) for fermentation.

After about 4-6 weeks, check for signs of fermentation completion (bubbles will cease).

Siphon the mead into sterilized bottles carefully, leaving sediment behind, and seal.

Age the mead in a cool, dark place for at least 3 months, longer for improved flavor complexity.
