ingredients
- 4 lb. honey
- 1/4 oz. citric acid
- 1/4 pint strong freshly-made tea
- 3 pints rose petals (fresh)
- Yeast (specific for mead or champagne)
- Nutrient (for yeast)
steps
- 1.
In a large pot, combine honey and 1 quart of water, heating gently to dissolve the honey completely without boiling.
- 2.
Once dissolved, remove from heat, and add the strong freshly-made tea, stirring well.
- 3.
Mix in citric acid to balance the flavors and enhance acidity.
- 4.
Allow the mixture to cool to room temperature.
- 5.
Carefully add the fresh rose petals to the cooled honey mixture, gently stirring to infuse the floral flavors.
- 6.
In a separate small bowl, hydrate the yeast with a little warm water and nutrient, letting it sit for 5-10 minutes.
- 7.
Pour the hydrated yeast into the honey and rose mixture, stirring gently.
- 8.
Transfer the concoction into a sanitized fermentation vessel, ensuring there’s enough headspace for bubbling.
- 9.
Seal with an airlock or cover with a clean cloth, allowing fermentation in a cool, dark place for about 4-6 weeks.
- 10.
Once fermentation is complete, siphon the mead into sterilized bottles, discarding the sediment.
- 11.
Age the mead for at least another month to allow flavors to meld before enjoying.
