Spicy Southwest Quinoa Stuffed Peppers
ingredients
- 7 large bell peppers (assorted colors)
- 1 1/2 cups quinoa
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 2 tbsp olive oil
- 1 1/2 tsp cumin
- 1 1/2 tsp paprika
- 1 tsp chili powder
- Salt and pepper to tasteOptional toppings: shredded cheese, avocado, cilantro
steps
- 1.
Preheat oven to 375°F.
- 2.
Cook quinoa according to package instructions.
- 3.
Cut tops off bell peppers, remove seeds.
- 4.
In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, olive oil, cumin, paprika, chili powder, salt, and pepper.
- 5.
Spoon quinoa mixture into bell peppers.
- 6.
Place stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes.
- 7.
Remove foil, sprinkle with cheese, bake uncovered for an additional 10 minutes.
- 8.
Serve hot with avocado slices and fresh cilantro.
