Almond Coconut Celebration Cookies
ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for coating
- 2 cups almond flour
- 1 cup coconut flour
- 1 cup finely chopped almonds, toasted
- 1 teaspoon vanilla extract

Preheat oven to 350°F.

In a mixing bowl, cream butter and sugar until light and fluffy.

Mix in vanilla and gradually add almond and coconut flour until dough forms.

Stir in toasted almonds.

Roll dough into 1-inch balls and place on baking sheet.
