- 4 lb. honey
- 1/4 oz. citric acid
- 1/4 pint strong freshly-made tea
- 1 pint elderflowers, fresh
- Yeast (recommended: champagne or mead yeast)
- Yeast nutrient

Begin by gathering fresh elderflowers; ensure they are free from bugs and dirt. Rinse gently if necessary.

In a large pot, bring 1 quart of water to a boil. Once boiling, remove from heat and steep your strong tea for about 10 minutes.

Stir in the honey until fully dissolved in the hot tea.

Add the citric acid and mix well, allowing the mixture to cool to room temperature.

Once cooled, transfer the mixture to a sanitized fermentation vessel.
