Fragrant Spice Chicken Biryani

- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 tablespoon biryani masala
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ cup plain yogurt
- ½ cup fresh cilantro leaves, chopped
- ½ cup fresh mint leaves, chopped
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons oil
- 4 cups water
- Salt to taste

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.

In a large pot, heat ghee and oil over medium heat. Sauté the onions until golden brown. Add garlic, ginger, and green chilies. Stir for a minute.

Add the chicken pieces and cook until browned. Add the biryani masala, turmeric powder, chili powder, cumin powder, and coriander powder. Cook for another few minutes.

Stir in the yogurt, half of the chopped cilantro, and half of the mint leaves. Mix well and cook for 5 minutes.

In a separate pot, boil 4 cups of water. Add the soaked rice and cook until it is 70% cooked. Drain the rice.

Layer the partially cooked rice over the chicken in the pot. Sprinkle the remaining cilantro and mint leaves on top.

Cover the pot with a lid and cook on low heat for 15-20 minutes until the rice is fully cooked and the flavors have melded together.

Gently fluff up the biryani with a fork, ensuring not to break the rice grains. Serve hot and enjoy the aromatic flavors of this fragrant spice chicken biryani!
