Savory Spiced Chicken Biryani

ingredients
- 2 lbs chicken, cut into pieces
- 2 cups basmati rice
- 3 onions, thinly sliced
- 1/4 cup plain yogurt
- 1/4 cup ghee or vegetable oil
- 2 tomatoes, diced
- 2 tbsp ginger-garlic paste
- 1 tbsp biryani masala
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 stick cinnamon
- 4 cardamom pods
- 4 cloves
- Salt and pepper to taste
- Fresh cilantro for garnish

Marinate chicken with yogurt, ginger-garlic paste, turmeric powder, salt, and pepper. Let it sit for at least 30 minutes.

In a large pot, heat ghee/oil and add cumin seeds, cinnamon, cardamom, and cloves. Sauté until fragrant.

Add onions and cook until golden brown. Stir in biryani masala.
