Fresh and Flavorful Veggie Stir-Fry Dinner

- 1 lb boneless, skinless chicken breasts, cut into strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium carrot, julienned
- 1 small head of broccoli, florets only
- 1 cup snow peas
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- Sesame seeds, for garnish (optional)
- Fresh cilantro, chopped, for garnish (optional)

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and cornstarch. Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken strips and cook until browned and cooked through. Remove from skillet and set aside.

In the same skillet, add the minced garlic and grated ginger. Sauté for 1 minute until fragrant.
