Tender pork with garlic-herb seasoning, fresh salad, and creamy mashed potatoes. A delicious and satisfying meal perfect for spring.
ingredients
- 1 lb pork tenderloin
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- Salt and pepper to taste
- 1 lb baby potatoes
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- Balsamic vinaigrette dressing

In a bowl, mix garlic, olive oil, thyme, rosemary, salt, and pepper. Rub mixture over pork. Place in Suvie protein pan.

Place potatoes in starch pan. Insert pans into Suvie. Input settings: Pork- Medium, 1 hour; Potatoes- Vegetable, 45 minutes.

After cooking, shred pork and slice potatoes. Toss greens, tomatoes, and onion with dressing.

Serve pork on salad alongside mashed potatoes.
