ingredients
- 4 lbs (1.8 kg) of wildflower honey
- 1 gallon (3.8 L) of filtered water
- 2-3 oz (56-85 g) of fresh ginger root (peeled and sliced)
- 1 packet of Lalvin D-47 yeast
- 1 tsp yeast nutrient
- 1 tsp yeast energizer

In a sanitized fermentation vessel, combine filtered water and wildflower honey, stirring gently until fully dissolved.

Add the sliced fresh ginger root to the honey-water mixture for that spicy zing!

Bring the mixture to a slight simmer (just below boiling) to help extract ginger flavors, then cool back down to room temperature.

Once cooled, sprinkle the Lalvin D-47 yeast over the surface along with the yeast nutrient and energizer, then stir gently to integrate.

Seal the fermentation vessel with an airlock, allowing the mead to ferment in a cool, dark place for 4-6 weeks.

Once fermentation is complete, siphon the mead off the sediment into clean bottles, optionally filtering it if desired.
