Moist and delicious banana bread with a crunchy walnut topping, perfect for breakfast or snack time.
ingredients
- 1 ½ cups gluten-free flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 3 ripe bananas, mashed
- ½ cup brown sugar
- ¼ cup melted coconut oil
- 2 eggs
- 1 tsp vanilla extract
- ¼ cup chopped walnuts

Preheat oven to 350°F and grease a loaf pan.

In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.

In another mixing bowl, beat mashed bananas, brown sugar, coconut oil, eggs, and vanilla extract until well mixed.

Combine the dry and wet ingredients and mix well.

Pour the mixture into the prepared loaf pan and sprinkle chopped walnuts on top.

Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Let it cool down for 10 minutes before removing it from the pan.
