ingredients
- 4 medium russet potatoes, peeled and grated
- 1 teaspoon onion powder
- 1 teaspoon garlic salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
- 2 tablespoons olive oil (for frying)
- Fresh herbs (like chives or parsley) for garnish, chopped

Rinse the grated potatoes under cold water to remove excess starch, then drain and pat dry with paper towels.

In a mixing bowl, combine the grated potatoes, onion powder, garlic salt, black pepper, and smoked paprika. Mix well.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Scoop about 1/2 cup of the potato mixture into the skillet, flattening it gently with a spatula.

Cook for 4-5 minutes until golden brown, then flip and cook for an additional 4-5 minutes on the other side.

Repeat with the remaining potato mixture, adding more oil as needed.

Once cooked, transfer the hash browns to a plate lined with paper towels to absorb any excess oil.
