- 4 pounds pure unprocessed honey

In a large pot, bring water to a boil.

Remove from heat and stir in honey until dissolved.

Let the mixture cool to 70°F.

In a separate container, mix yeast, red rice yeast, and yeast nutrient.

Add yeast mixture to the cooled honey water.
- 6.
Cover and let ferment for 4-6 weeks.
- 7.
Transfer to bottles and let age for at least 1 month before serving.
