Golden Medley Fried Rice

- 1 cup jasmine rice
- 8 oz shrimp, peeled and deveined
- 8 oz chicken breast, diced
- 2 eggs, beaten
- 1 bell pepper, diced
- 1 carrot, diced
- 1 cup frozen peas
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon chili flakes (optional)
- 3 tablespoons vegetable oil
- Salt and pepper to taste

Cook the jasmine rice according to package instructions and let it cool.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble them. Remove from the skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil and cook the shrimp and chicken until they are fully cooked. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil and sauté the onion, garlic, bell pepper, carrot, and peas until they are tender.

Push the vegetables to one side of the skillet and add the cooled rice to the empty space. Stir-fry the rice for a couple of minutes, breaking up any clumps.

Add the cooked shrimp, chicken, scrambled eggs, soy sauce, oyster sauce, honey, sesame oil, chili flakes (if using), and season with salt and pepper. Mix everything together until well-combined and heated through.
