Pilsen Honey Lager

- 9 lbs Pilsner Malt
- 1 lb Munich Malt
- 0.5 lb Crystal Malt (40L)
- 1 oz Hallertau Hops (bittering)
- 0.5 oz Saaz Hops (flavor)
- 1 cup clover honey
- 1 packet Pilsner yeast
- 5 oz corn sugar (for priming)
- 5 gallons filtered water

Heat 3 gallons of water in a brew kettle to 162°F.
- 2.
Add the Pilsner, Munich, and Crystal malts to a grain bag and steep in the heated water for 30 minutes.

Remove the grain bag and allow to drain, then bring the wort to a boil.

Add Hallertau hops and boil for 60 minutes.
- 5.
In the last 15 minutes of the boil, add Saaz hops.
- 6.
Cool the wort quickly using a wort chiller or an ice bath to around 70°F.
- 7.
Transfer the cooled wort into a sanitized fermentation vessel and add enough water to reach 5 gallons.
- 8.
Stir in the clover honey until fully dissolved, then pitch the yeast.
- 9.
Seal with an airlock and ferment at 65-70°F for about two weeks.
- 10.
Once fermentation is complete, mix corn sugar with a little water, boil, and cool.
- 11.
Add this mixture to a sanitized bottling bucket and siphon the beer on top, then bottle.

Let the bottles carbonate for at least two weeks at room temperature, then chill and enjoy!
