ingredients
- 1.5 pounds boneless, skinless chicken breasts
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup mirin (sweet rice wine)
- 2 tablespoons rice vinegar
- 1 tablespoon freshly grated wasabi (or wasabi paste)
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 1 tablespoon water
- Sesame seeds and chopped green onions for garnish
steps
- 1.
In a mixing bowl, whisk together soy sauce, brown sugar, mirin, rice vinegar, grated wasabi, garlic, ginger, and sesame oil until combined.
- 2.
In a small pot, simmer the marinade over medium heat. Dissolve cornstarch in water and add to pot, stirring until thickened. Remove from heat and let cool.
- 3.
Reserve 1/4 cup of the marinade for basting; use the rest to marinate chicken.
- 4.
Place chicken breasts in a resealable plastic bag and pour the marinade over. Seal and refrigerate for at least 1 hour, preferably 4 hours.
- 5.
Preheat your grill to medium-high heat.
- 6.
Remove chicken from marinade, allowing excess to drip off. Discard used marinade.
- 7.
Grill chicken for about 6-7 minutes per side, basting with reserved marinade, until internal temperature reaches 165°F.
- 8.
Let the chicken rest for 5 minutes before slicing.
- 9.
Garnish with sesame seeds and chopped green onions before serving.
