ingredients
- 1 cup pearl barley
- 1 onion, chopped
- 2 cups sliced carrots
- 1 cup chopped celery
- 4 cups vegetable broth
- 4 cups water
- 1 tsp salt
- 1 tsp black pepper
- 2 bay leaves
- 2 cloves garlic, minced
- 1 tsp dried thyme

Rinse barley in cold water and drain.

In a large pot, bring vegetable broth, water, onion, carrots, celery, salt, pepper, bay leaves, garlic, and thyme to a boil.

Add barley to the pot and stir well.

Reduce heat and simmer for 45-50 minutes until barley and vegetables are tender.

Remove bay leaves before serving.
