Hearty Chili Rice Bowls

- 2 cups cooked white rice
- 1 cup broth (vegetable or chicken)
- 1 can (15 oz) corn, drained
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 medium tomatoes, diced
- 1 cup green peppers, chopped
- 1–2 Hatch chilies, diced (adjust to taste)
- 1 teaspoon ground cumin
- 1 tablespoon hatch chili powder
- 1 cucumber, diced
- 1 cup sour cream
- 1 cup pepper jack cheese, shredded
- 2 tablespoons lime juice
- Tortilla chips, for serving

In a large skillet, heat 1 tablespoon of oil over medium heat. Add chopped onions and garlic; sauté until translucent.

Stir in the green peppers, tomatoes, corn, diced Hatch chilies, ground cumin, and hatch chili powder. Cook for 5 minutes until softened.
