Hearty Egg, Sausage and Hashbrown Breakfast Casserole

- 1 lb ground breakfast sausage
- 1 cup chopped onions
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 12 eggs
- 1/4 cup milk
- 1 (20oz) package shredded hash brown potatoes
- 2 cups of shredded cheddar cheese
- 2 tbsp chopped chives
- 1 tsp dried basil
- Salt and pepper, as per taste

Preheat oven to 350°F.

Over medium heat, in a large skillet, cook the sausage, onions, and bell peppers together till the sausage is no longer pink. Remove from heat.

In a mixing bowl, whisk the eggs, milk, salt, and pepper and set aside.

Grease a 9x13 inch baking dish with cooking spray. Layer the hash browns at the bottom followed by the cooked sausage mixture.

Pour the egg mixture over the sausage mix, and top with shredded cheese, chives, dried basil, salt, and pepper.
