Double Bean and Ham Cassoulet

- 4 oz ham, cubed
- 4 oz sausage, sliced
- 2 strips bacon, diced
- 2 cans (15 oz each) white beans, drained
- 4 tbsp tomato paste
- 1 cup white wine
- 1 onion, chopped
- 2 stalks celery, diced
- 2 carrots, sliced
- Salt and pepper to taste

In a large skillet over medium heat, cook the diced bacon until crispy.

Add the chopped onion, diced celery, and sliced carrots to the skillet, sautéing until softened (about 5 minutes).

Stir in the cubed ham and sliced sausage. Cook for another 5 minutes until the meats are browned.

Add the tomato paste and mix well, allowing it to coat the meats and vegetables.

Deglaze the skillet with the white wine, scraping up any flavorful bits stuck to the bottom. Let it simmer for 3 minutes.
