Hearty Ham and Cabbage Minestra
"Minestra Ingredients 1. 2 ham hocks 2. 1 head of savoy cabbage 3. 4 potatoes 4. 1 medium can crushed tomatoes (or use 3 fresh tomatoes, chopped) 5. 1 large onion 6. 1 can of white cannolini beans 7. 2 cloves of garlic 8. 4 tablespoons olive oil 9. salt and pepper to taste Saute garlic in olive oil in a large pot; add 2 quarts of water, and all of the ingredients except for the savoy cabbage. Let it simmer slowly about 2 hours. In a separate pot, boil the savoy cabbage cut in quarters until tender, about 15 minutes. Break it up into small pieces if necessary. Drain the cabbage and add it to the ham and vegetables. Stir lightly until mixed. Serves 5-6."
