- 1 cup dried navy beans, rinsed and soaked overnight
- 1 large onion, chopped
- 2 carrots, diced

- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
