Rustic Italian Sausage Rice Bowl
ingredients
- 1 lb Italian sausage, casings removed
- 2 cups fresh spinach, chopped
- 1 cup green beans, trimmed and cut
- 1 cup corn (frozen or fresh)
- 1 cup peas (frozen or fresh)
- 1 teaspoon garlic powder
- 1 cup rice (white or brown)
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons olive oil

In a large pot, heat olive oil over medium heat.

Add the Italian sausage, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

Stir in the green beans, sautéing for 3-4 minutes until slightly tender.

Add the corn and peas, cooking for an additional 2 minutes.
- 5.
Sprinkle in garlic powder along with salt and pepper, mixing well.
- 6.
Pour in the chicken broth and bring the mixture to a boil.
- 7.
Stir in the rice, lower the heat, and cover the pot.
- 8.
Simmer for about 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

Add the chopped spinach, mixing gently until wilted.
- 10.
Serve warm, garnished with additional pepper if desired.
